Description

Semi-fat semi-hard cheese made with 100% Italian milk from only brown Alpine cows from stables and mountain dairies located at an altitude of over 500 metres in the upper Lake Garda area.

During the curd breaking phase, organically grown apples, exclusively from Trentino, are added. The rind is irregular, given the artisanal nature of the product, and the white paste contains visible pieces of apple. It is a cheese with a fragrant flavour and a delicate aroma of mountain meadows. Expertly matured for at least 30 days in rooms with selected moulds.

Exquisitely good and highly digestible.

Pairings

Excellent paired with apple mostarda and a good sweet wine.

Fresh questions from the mountain pasture

Are your cheeses gluten-free?

Yes, all our cheeses are naturally gluten-free.

What kind of cheese do you produce?

We produce semi-hard cow’s milk cheese, handmade and aged in Valsugana, available in various flavours: from the most delicate to the most flavourful, to suit every palate.

Where does the milk come from?

Only 100% Italian cow’s milk is used, sourced from cows raised in the Brenta meadows and processed in the Valsugana maturing rooms.

Which Crucolo cheese is best suited to those who enjoy delicate flavours?

Crucolo Dolce is the ideal choice: it has a soft texture and a more delicate flavour, perfect even for those trying our products for the first time.

How can Crucolo cheese best be stored at home?

We recommend storing it in the refrigerator, wrapped in food-grade paper or in an airtight container, and taking it out a few minutes before serving to fully appreciate its aroma and flavour.

Besides the classic variety, are there any other innovative cheeses?

Of course! There is Crucolina, a soft cheese with pieces of organic apple from Trentino, and Crucoloso, a creamy spreadable version for snacks and first courses.
