Description

Semi-hard cheese made from selected high-quality whole pasteurised cow’s milk of Italian origin. The white, buttery texture and uniform eyes make this cheese very distinctive. The evenly distributed rind is indicative of the great care taken during the maturing process, which lasts for over 60 days and is carried out under optimal temperature and humidity conditions. During the maturing period, the wheels are washed with water and turned twice a week.

The result is Crucolo Saporito cheese with a sweet, slightly acidic taste, perfectly salted with a slight bitter-spicy note.

Pairing

Its slightly spicy notes make it perfect for accompanying rich and complex dishes, such as the classic polenta and mushrooms, or pairing with a good glass of Traminer.
